Freeze-Dried Strawberries for Added Flavour and Colour
The sweetness in this salad comes from freeze-dried strawberries, which maintain the nutritional benefits of fresh strawberries while offering a longer shelf life. Available in either slices or pieces, they can be chosen based on your preferred chunk size for pre-made salads.
Half of the strawberries are incorporated into the balsamic dressing, adding texture and a rich flavour. The remaining strawberries are sprinkled on top, providing a delightful burst of flavour and visual appeal.
Ingredients for Strawberry and Halloumi Salad:
- 1 Block Halloumi
- 5-6 Basil Leaves
- Handful of Freeze-Dried Strawberry Pieces
- 100ml Balsamic Vinegar
- 50g Caster Sugar
- Handful of Rocket Leaves
- 2 Tbsp Olive Oil
- 3-4 Slices of Prosciutto Ham
Let’s Give it a Go!
- In a saucepan, combine the balsamic vinegar and sugar. Heat and simmer until reduced to a sticky consistency that coats the back of a spoon. Remove from heat, stir in Ā¾ of the freeze-dried strawberries, and let the mixture cool.
- Heat 1 tbsp of olive oil in a non-stick pan over medium heat.
- Fry the halloumi until golden brown on both sides. Remove from the pan and set aside.
- To assemble the salad, lightly dress the rocket and basil leaves with a bit of olive oil.
- Arrange the fried halloumi on the salad, then top with slices of prosciutto.
- Drizzle with the balsamic dressing and scatter the remaining freeze-dried strawberry pieces on top.
